Did you know that pumpkins are actually a fruit? Any plant that produces flowers, and the flowers grow the produce is classified as a fruit! This includes pumpkins, cucumbers, tomatoes and even avocados. Each pumpkin produces around 500 seeds, which in turn, can all be planted to grow 500 pumpkin plants, producing even more pumpkins. They take about 90-120 days from plantation to producing a new fully sized pumpkin, in which there are over 45 different varieties. Every part of the pumpkin is edible, from the stem to the flowers to the skin to the sweat goodness inside! The orange coloring of a pumpkin is caused by Beta carotene, which is the same carotene found in carrots and sweet potatoes, giving them the same orange pigment. Beta carotene turns into Vitamin A during digestion, which is good for your eyes, skin and immune system. Pumpkins originated in Central America, but today grow on every single continent except Antarctica. In the United States, Illinois grows the most pumpkins…almost twice as many as any other state!
